The couple have been running their organic farm at Gerringong for several years and take great pride in producing quality produce, and now, award-winning pasture-raised chickens.
“delicious magazine has recognised some fantastic producers of all kinds of produce and we see our award as helping raise the profile of our pasture-raised chickens,” Mrs Weir Walmsley said.
“It helps us highlight the difference between free-range and pasture-fed poultry.
“Our pasture-fed chickens are raised in brooders for the first few weeks before being moved out to our specially-made yards in open pasture, where they are moved regularly to make sure they can feed on fresh grass in and enjoy open spaces.”
“It takes a little bit longer for the birds to mature, but we believe it is worth it in the long-run.
“They are then transported to Sydney for processing and sold to Feather and Bone Providores in Sydney, simply because of the enormous cost of refrigeration to transporting them back here.
“But the good news is that we are currently investigating starting our own poultry abattoir locally which will allow us to process the chickens here and sell them locally through local farmers' markets.”
Adam Walmsley said the pasture-fed chickens also help maintain the quality of their pastures.
“The fact that we move the chickens around means that they deliver deep, nitrogen-rich fertiliser to our pastures.
“It also shows that you don’t have to have an enormous amount of land to run pasture-fed chickens.”
All the state finalists will be judged with the finalists from around the country in their category on the national judging day, July 27. The national judging panel includes Matt Moran, Guillaume Brahimi, Maggie Beer, Alla Wolf Tasker, Shannon Bennett, Christine Manfield and delicious' Valli Little.
